Overview A warm and filling dish. Equipment medium to large saucepan small pot ladle Components 1tbs butter 1lb mushrooms .5-1lb white or yellow onion 1 cup shredded parmesan cheese (plus some extra for topping) 1-2 scallions 3-5 garlic cloves salt pepper .5-1 cup of white wine ~30oz chicken broth 2 cups rice Compile put all the broth in the pot chop the onion chop the mushrooms into bite-sized pieces chop the scallion mince the garlic put butter in the saucepan Build place the saucepan on medium heat place the pot on medium heat melt butter in saucepan brown garlic and scallion in saucepan brown onion in saucepan add mushrooms to saucepan add uncooked rice to saucepan mix and stir contents of saucepan, salt and pepper to taste wait for mushrooms to heat a bit add white wine to saucepan wait for wine to cook off add a ladle or two of broth from pot to saucepan wait for broth to be absorbed once broth is finished, check rice for consistency - add in water if still hard once rice is done, add cheese and mix in Deploy Serve immediately with a sprinkling of parmesan on top.

Equipment skillet bowls Components 1lb sweet potatos tacos seasoning mix (3 parts ancho chili powder, 1 part cumin, 1 part paprika works well) some purple cabbage leaves .5 red onion 1 scallion sugar honey rice vinegar olive oil salt and pepper tortillas small bunch of cilantro 1 lime Compile peel and dice the sweet potatos into 5-10mm chunks chop the red cabbage leaves into strips chop the red onion dice the scallion finely chop the cilantro slice the lime into quarters Build place the cabbage, half the onion, and the scallion into a bowl.
Overview Tacos with a new shape and delightful look. video Equipment skillet muffin pan on oven large enough for the muffin pan with >2" top clearance Components 1lb ground meat seasoning mix for meat .25lb shredded cheese (mexican blend recommended) 8-12 flour tortillas 1 jalapeno Compile slice the jalapeno into an equal number of slices as you have tortillas preheat oven to 350 degrees F Build heat/steam the tortillas place the warmed tortillas in the muffin pan so each forms a bowl brown the meat in the skillet add seasoning to meat spoon the meat into the tortillas distribute the cheese atop the meat place a jalapeno slice in the center of each flower bake for ~10 minutes until the tortillas harden slightly and begin to brown Deploy Lift eahc flower out gently and plate.

Equipment skillet pie dish on oven large enough for the pie dish with >2" top clearance Components 1lb ground meat seasoning mix for meat .5lb shredded cheese (mexican blend recommended) 2 pie crusts 1 can of green chiles butter Compile open and drain the chiles place one pie crust in the pie dish line the bottom of the pie crust with green chiles preheat oven to 350 degrees F Build brown the meat in the skillet add seasoning to meat place the cooked meat atop the green chile layer add the cheese on top of the meat invert the second pie crust and place it on top and seal it to the lower crust lightly butter the top bake for ~10 minutes until the crust browns Deploy Serve in slices.
